Turnip & Blue Cheese Muffins a/k/a “A Savory Punch in the Face”

These are not for everyone…

I have recently decided to try not eating grains. My love of inconvenience and the money burning a hole in my purse made the “paleo” diet a perfect choice for me. Here are some crazy mini muffins I made today (so that I could have something to snack with wine):

1/2 c. mashed, cooked turnips

1tbls grass-fed butter, cuz its awesome.

2 eggs

1/3 c almond meal

1/3 c hazelnut meal (or more almond meal)

2 tbsp raisins

a small hand-full of pecan pieces

1tsp baking powder (I’m convinced it’s made of magic)

a chunk of blue cheese about the size of a lipstick tube

1/2 tsp minced fresh parsley ( I did not have this in mine and decided that it would have made them better)

salt & pepper

Pre-heat oven to 350.  Line mini-muffin tins with paper cups.

Beat eggs.  Combine everything but cheese until mixed.  Smush/crumble blue cheese into mixture and mix until just so. (don’t overmix) About 2 heaping iced-tea spoons worth of batter should fit in each.  Bake for 20 min.  Turn oven off and let ’em coast for another 5.  Remove from oven and let cool slightly on rack.  Serve with salted, grass-fed butter (Kerrygold is our favorite!) and some red wine.  PoW!
